The other request for this weekend was Oreo Truffles and they are so simple to make it hardly warrants a recipe.
Take 2 Packets of Oreos (300g) and whiz them in a food processor until powdered, add 130g of Cream Cheese and whiz again until combined. Pluck out 20g blobs of the mixture and roll into balls with the palms of your hands whilst trying not to eat too much of the mixture off of your fingers. Place the balls on some greaseproof paper on a baking tray and chill for a couple hours or overnight. If you were restrained you should have around 21 truffles at this point!
Once they’ve chilled and firmed up then melt about 200g of chocolate and about 5-10g of butter in a bowl over boiling water, 50/50 dark/Cadbury’s is a nice combo. Take the chocolate off the heat as soon as its all melted, don’t overheat the chocolate or it will go grainy and horrible.
Take a toothpick or thin bamboo skewer and carefully pick up each one and dunk it in the chocolate covering it completely, tap the skewer on the edge of the bowl to remove the excess chocolate or not if you want extra thick Chocolate and then gently ease the truffle off the skewer and back onto the greaseproof paper.
Once they are all done place in the fridge to cool/set, once set you can put them in a smaller airtight box. I’ve no idea how long they keep as they barely last any time in our house as they are that yummy.
